This is a very easy to make vegetable soup with chicken recipe that is satisfying and delicious.
Heat the oil in a soup pot set over medium heat.
Add the onion and sauté until tender, about 5 minutes.
Add the chicken pieces and sauté until browned and cooked through.
Add celery and sauté for 5 minutes, until transparent.
Pour in the chicken stock and bring to a boil.
Add the potatoes and carrots.
Return to a boil and then reduce heat to a simmer.
Allow soup to cook for 20 minutes, until potatoes are tender.
Season to taste with salt and pepper.
