Zucchini And Tomato Bake Recipe

Healthy zucchini and tomato bake, this casserole is covered with cheese and served with flavorful arugula.


4 cups zucchini
1 large white onion
2 cups broccoli, cut to bit size
2 Tablespoons vegetable oil
12 grape tomatoes, halved
1/2 cup Parmesan cheese
1 cup mozzarella cheese, shredded
salt and pepper, to taste
1 teaspoon dried basil
arugula to serve


Preheat oven to 350 degrees F.

Lightly oil a 9x9 inch baking dish.

In a large frying pan saute onions in oil until clear.

Add in broccoli and zucchini, cover and steam for 5 minutes.

Transfer vegetables to baking dish.

Add in tomatoes.

Sprinkle with cheeses

salt and black pepper, and sprinkle basil over top.

Cover with foil, and bake for 20-25 minutes or until cheese is melted and vegetables are tender.

Serve with arugula.
