Funfetti Blondie Bites

Ingredients
- 1/2 C (1 stick) butter, softened
- 1 C light brown sugar
- 1 egg
- 1/2 tsp vanilla
- 1 C all-purpose flour
- Pinch of salt
- 1/2 tsp baking powder
- 1 T powdered sugar
- 1/2 C sprinkles
Extras
- 8-10 oz white chocolate
- Sprinkles for decorating
- Makes 36 small bites (plus more for snacking)
Directions
- Preheat oven to 350 degrees F. In a medium bowl, combine butter and brown sugar and mix until well combined. Add in the egg and vanilla; mix to incorporate. Mix in the flour, salt, powdered sugar and baking powder. Stir until everything comes together. Lastly, add the sprinkles. Stir.
- Spray an 8X8 dish with cooking spray. Cook for 29 minutes, or until tooth pick comes out clean. Let dish cool completely on a cooling rack.
- Next, cut off the darker, crispy edges.
- Cut into 6 strips, then cut those into 6 squares. You should have 36 squares when you finish cutting.
- Place squares on parchment paper covered baking sheet, and into fridge to get slightly chilled. Melt chocolate in the microwave or double-broiler; be careful not to burn it. Dip one blondie bite at a time into the white chocolate. Use a spoon to help you cover it if needed. Cover with chocolate and place back on the parchment covered baking sheet. Decorate with sprinkles. Repeat with remaining blondie bites. Place pan in fridge so the chocolate will set.
