Best Ever Brownie
This is the best ever brownie! Truly, it is simple to make, uses regular kitchen ingredients and comes out moist and chocolatey every time.

Ingredients
Brownie
- 3/4 cup butter, plus more for greasing
- 3/4 cup cocoa powder
- 2 1/4 cups granulated sugar
- 1 teaspoon pure vanilla extract
- 4 large eggs
- 1 1/4 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
V
- 4 ounces dark chocolate
- 1/2 cup heavy cream
- pinch of salt
Garnish
- 1 cup chopped walnuts, crushed fine
- coarse sea salt
- (Makes 1 9x13-inch brownie)
Directions
- Preheat oven to 350ºF.
- Lightly grease a 9x13" pan with butter. Set aside.
- In a large sauce pan set over low heat, melt the butter.
- Stir in the cocoa.
- Remove from heat and add the sugar and vanilla. Mix until well combined.
- Add the eggs one at a time, mixing between each addition.
- In a separate bowl, combine the flour, baking powder and salt.
- Stir dry ingredients into the chocolate mixture and mix until just combined.
- Pour brownie badder into the prepared baking dish and transfer to the preheated oven.
- Bake for 30 minutes, or until centre springs back when lightly touched.
- Cool completely, in the baking dish before cutting into squares.
- For the ganache, chop the chocolate into fine pieces and put into a heat proof pot.
- In a small pot, bring the heavy cream to a boil over medium to high heat.
- Pour the boiling cream over the finely chopped chocolate. Add a pinch of salt.
- Leave to sit for 10 minutes and do not stir. Stirring will cool the ganache too quickly and make it grainy.
- After 10 minutes, stir with a whisk until the ganache is nice and creamy.
- Use a spatula to scrape down the sides to be sure the chocolate is off the bottom of the pot.
- The ganache is ready to use.
- Cut the cooled brownie into 2x2-inch squares.
- Drizzle over a spoon full of the chocolate ganache.
- Sprinkle over a few walnuts and some coarse sea salt.
Serve.
