Greek Nachos Recipe and Homemade Baked Pita Chips

Ingredients

Pita Chips

  • 4 pita pockets, split and cut into wedges (you can use a combination of white and whole wheat)
  • Olive Oil
  • Sea Salt
  • Baked Pita Chips (see recipe above)
  • 1/2 cup Dannon Oikos Cucumber Dill Yogurt Dip (use more or less as desired)
  • 2 chicken breasts, grilled and cubed (I used a Greek Dressing to marinate the chicken before placing it on the grill)
  • 1/2 red onion, chopped
  • 1/2 cucumber, chopped
  • 3-4 green onion stalks, chopped
  • 1/2 cup Kalamata Olives, pitted and sliced
  • 1/2 roasted red pepper, chopped
  • 2 sprigs of parsley, chopped
  • 10 Cherry tomatoes, quartered
  • 1/2 cup of feta cheese, chopped

Directions

  1. Lay out pita wedges on a greased baking sheet
  2. Brush a thin layer of olive oil across the tops of the pita wedges
  3. Sprinkle with sea salt
  4. Bake at 350 degrees F for 10-15 minutes until crispy
  5. If you're planning to use these baked pita chips for nachos, turn off the oven and leave them inside to stay warm
  6. Once youve baked your pita chips, simply chop up your favorite Greek-style ingredients and assemble the nachos.
  7. Arrange warm pita chips on a plate
  8. Drizzle chips with yogurt dip (I placed 1/2 cup in a ziploc bag and then cut off the corner for an even drizzle)
  9. Top with chicken, chopped vegetables, and cheese and serve immediatel
