Roasted Garlic

Roasted Garlic

Ingredients

  • Heads of Garlic, as many as you want

Directions

  1. First thing you want to do is tare off about 16 inches of foil, and form 3/4th of the sheet into a bowl shape, then set it on a cooking sheet.
  2. Using a sharp knife cut the top of the head of garlic off exposing each clove inside then set it in the foil bowl you just made.
  3. Drizzle about 2 tablespoons of olive oil over the head making sure each exposed clove is covered well. Take the remaining piece of the foil that is hanging off your formed foil bowl, and cover the top loosely.
  4. All thats left is to place it in a 350 degree oven for about 30 to 40 minutes.
  5. Start to check the garlic at around 30 minutes, but will let it go as long as 40, or even at times 45 minutes. You want to catch it before it burns.
  6. After you remove your garlic set it on a rack, or cutting board to cool enough to be able to touch it. Once it is cool enough to touch the garlic is easily squeezed out of its paper like skin.
  7. Roasted garlic can be used in a variety of dishes that you would use raw garlic in, but works well in soups, dressings, and sauces. Its fantastic creamed into mashed potatoes, but my favorite is to just spread it on a toasted piece of French bread, and enjoy.
