Bacon-Wrapped Potato Wedges with Creamy Dill Dip

Ingredients
Potato Wedges
- 4 large russet potatoes
- 16 slices bacon (cured)
- 8 slices cheese of any kind, halved
- olive oil (for frying potatoes)
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper, freshly ground
- 16 toothpicks
Creamy Dill Dip
- 8 ounces sour cream
- 2 teaspoons lemon juice, freshly squeezed
- 3 tablespoons fresh dill, chopped
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper, freshly ground
Directions
- Preheat oven to 375 degrees (F). Scrub potatoes, then puncture each one several times with a fork, to create an escape for steam. Place potatoes directly on oven rack, in the middle of oven, and bake for about 20 minutes.
- Meanwhile, place sour cream in a small bowl, and add in lemon juice, salt, pepper, and fresh chopped dill. Combine until mixed well, then refrigerate until potato skins are complete.
- Pull potatoes from oven, and allow to cool until they can be handled comfortably. With a sharp knife, cut potatoes in half long ways, and then slice halves in half again, to create wedges.
- In a large frying pan, pour in olive oil to about 1/2 inch depth, then place all 16 potato wedges in oil, skin side up. Fry for about 5 minutes on each side, or until golden. Remove from pan and place on a large baking sheet.
- While golden fried potatoes are cooling slightly, cook bacon halfway (only about 2 minutes or so), and place on a paper towel lined plate to drain. Cut cheese slices in half.
- For each potato wedge: place a cheese slice over the top, then wrap snugly with a slice of bacon, Place a toothipick in the center to hold bacon and cheese in place. Replace on the large baking sheet and broil on low for about 5 minutes, or until bacon is crispy and cheese is melty.
- While bacon wrapped potato wedges are in the finishing stage of broiling is the perfect time to retrieve the creamy dill dip from the refrigerator, and place in a decorative bowl or ramakin.
- Remove finished wedges from baking sheet and arrange on a serving plate, with dip in the middle for convenience. Enjoy!
