Delicious Cinnamon Rolls

Ingredients
- 2 packages of yeast (you can use rapid rising yeast if you are in a crunch)
- 1/2 cup warm water
- 2 cups and 1 tablespoon sugar
- 2/3 cup margarine
- 6 large eggs, beaten
- 1 cup dried mashed potato flakes (use the real ones)
- 2 1/2 cups milk, scalded
- 2 teaspoons salt
- 6 cups of flour
- 1 cup of melted salted butter
- 1/3 cup cinnamon
Directions
- Dissolve the yeast in the warm water and add 1 tablespoon of sugar. Set aside.
- Mix 1 cup of sugar, the margarine, eggs, and mashed potato flakes in a large bowl. Preferably, use a KitchenAid, but if you dont have one, use a hand-held mixer or a regular whisk.
- Add the milk and salt to the batter. Mix well.
- Slowly mix in the yeast mixture and the flour. The mix should be a sticky dough. Continue to knead it in the KitchenAid or with a spoon for 10 minutes. Then, let the dough rise until it doubles.
- Preheat oven to 350F.
- Roll out the dough on a well-floured surface.
- You will need ample space, such as a table. Roll it to about 1/4 inch thick to a size of about 2.5 by 3 feet.
- Use a brush to paint the canvas with the melted butter. Liberally sprinkle the remaining sugar on the dough. Then, sprinkle on the cinnamon.
- Roll the dough tightly like a jelly roll. Then cut the dough into 2-inch wide segments. Place the buns onto a cookie sheet. Place then with two inches of space on all sides as they will expand in the oven.
- Bake for 15 minutes. Let cool for five minutes before removing from the sheet. Enjoy while hot!
