Cajun Bacon Wrapped Scallops

Ingredients
- 12 large Sea Scallops, trimmed, rinsed and patted dry
- 6 slices of smoked bacon (your choice) cut in half length wise
- About 4-5 tablespoons melted butter
- About a tablespoon of Cajun Seasoning
- A teaspoon of lemon or lime juice (optional)
Toothpicks
Cooking Spray
Directions
- Preheat oven to 375 degrees F
- Lightly spray a 99 or a 913 baking dish wth cooking spray. If you have a rack, that will fit into the baking dish (preferred); Line the baking dish with aluminum foil (shiny side down), spray the baking dish with cooking spray (including the foil lined bottom), put the rack in the baking dish and spray it lightly as well (using the rack and the foil lined bottom of the baking dish makes clean up much easier)
- Precook the bacon until just soft and pliable. If you can find the precooked bacon in the supermarket, it is perfect for this recipe as it is already at the soft and pliable state when you buy it and you can just cut it lengthwise and wrap the scallops immediately. No pre cooking necessary.
- Melt the butter in a pan or in the microwave in a small bowl. Mix Chef Ron Locks Cajun Seasoning in with the butter and the lemon or lime juice.
- Dip each scallop into the seasoned melted butter. Reserve the seasoned butter.
- Wrap a single strip of bacon around each scallop and secure with a toothpick as needed. You can put the toothpick completely through the scallop if needed.
- Arrange the scallops in the baking dish or on the rack in the baking dish and bake on the middle rack of the oven for about 15 minutes or until the bacon is crisp and the scallops are cooked.
- When cooked, you can use the remaining seasoned melted butter to dip the scallops in. Either toss all the scallops in the butter and serve or divide the butter into ramekens and serve individually with the individual servings. You can also serve with your favorite dipping sauces if desired. Garnish with lemon or lime wedges.
