Grilled Parmesan Herbed Potatoes

Ingredients
- 7-8 Medium sized red potatoes, diced into 1/2" cubes (leave the peels on)
- 3/4 cup freshly grated Parmesan cheese (divided) (not the stuff in the green can)
- 3 TB clarified butter or Ghee- room temperature
- 2-3 TB Master Fat (bacon grease/pig butter) or other fat of your choice- room temperature
- 1 tsp. sea salt
- 1/4 tsp. freshly grated black pepper
- 2-3 tsp. finely chopped fresh rosemary- divided (you can use dried, just crush it first and use about 1 tsp.)
- 1 TB + 2 tsp. finely chopped fresh parsley- divided
- 2 tsp. fresh garlic/Chinese chives finely chopped, divided (optional, but tasty)
- Serves 4
Directions
- Heat the grill between 400-500 degrees.
- You can also bake in the oven.
- Line your grill basket with heavy duty foil and place a folded piece of parchment atop the foil.
- In a large bowl add the diced potatoes, and 2 TB of the clarified butter and 2 TB of the Master Fat (or other fat of your choice).
- Using clean hands, mix the potatoes and the fat until all the potato chunks are coated.
- Sprinkle in the salt, pepper, half the rosemary--start with 1 tsp. of rosemary, and add a little more if you feel it needs it, 1 TB of the parsley, and 1 tsp of the garlic chives and 1/4 cup of the parmesan cheese.
- Again with clean hands, mix ingredients until everything is well combined and coated in all the herbs and seasonings.
- Check to see if you need to use the remaining TB of fat (just toss in in there)
- Gently pour potato-herb mixture into prepared grill pan and grill until golden brown and delicious. About 25-30 minutes.
- Stir every few minutes to ensure even cooking and that nothing sticks/burns to the bottom of your grill pan. (this is why I use the parchment over the foil)
- When finished, take off the grill, carefully scoop the potatoes into a clean bowl, add the remaining herbs and parmesan cheese and toss until combined.
- Taste, add a little extra salt if desired and a drizzle of good olive oil if you wish.
- Serve immediately.
Notes
- Leftovers can be saved in an airtight container in the fridge for up to 3 days.
