Ground Beef Ketchup Meatloaf

Ingredients

Meatloaf

• 1 medium size onion, diced
• 2 lbs ground beef
• 1/4 cup barbecue sauce
• 1/2 cup dijon mustard
• 2 eggs, beaten
• 1 cup bread crumbs
• 1/2 teaspoon salt
• 1/4 teaspoon pepper

Topping

• 1/2 cup ketchup
• Serves 4-6

Directions

1. Preheat the oven to 350F.
2. Grease a medium sized baking dish or loaf pan.
3. In a large mixing bowl, combine all ingredients and mix until evenly combined.
4. Form meatloaf into a log shape and place into the baking dish or loaf pan.
5. Place in the preheated oven and bake for one hour.
6. Half way through the cooking time, (at 30 minutes) spread ketchup over top of meatloaf, continue baking for final 30 minutes.
